If you have some 1.2 volt NiMH batteries, is there a difference in the
quality -- or quantity -- of charge, if they are charged for the
prescribed duration in a 30 minute charger, a 2 hour charger, a six hour
charger, etc?
Will the charge last as long if the batteries were put into service
after 30 minutes in the 30 min. charger, as it would after 6 hours in
the 6 hr. charger?

If the batteries are designed for fast charging and used in a proper
charger, the charge level shou;d be the same.
There are exceptions - a battery that is hot from hard use won't
receive a proper charge until it has cooled to the "rated" temperature
range (whatever the batterty spec lists).
